Zucchini Slice

Looking for a quick nutritious snack, breakfast, lunch or even dinner you can have on the go? Try this tasty, low carb, high protein paleo zucchini slice!

Knock up a batch beforehand and keep in the fridge for an on-the-go breakfast or cut up a larger serving for a meal. Traditionally, zucchini slice includes cheese, this recipe excludes cheese, if you really need your cheesy fix add cottage cheese or feta. Fast food doesn’t have to be fat food!

Ingredientszucchini slice

5 Rashers of Shortcut Bacon, chopped
1 Carrot, grated
2 Zucchini, grated
1 Brown Onion, chopped
½ Red Capsicum, chopped
1 Cup of Almond Meal
5 Eggs
Salt and Pepper, to taste (Use himaylayan sea salt for optimum health properties)

  1. Pre-heat over to 180C
  2. Place zucchini, carrot, capsicum, bacon, onion and almond meal in a bowl and mix
  3. Lightly beat the eggs in a separate bowl, them add to the mixture
  4. Add salt and pepper to taste
  5. Mix well to combine
  6. Place in an ovenproof dish and into the oven for 35-40 minutes.
